ya bro, some things take time. kind of like going to the gym. if you try to make it faster and easier, your body will suffer. just suck it up.

You can read studies on egg proteins that go both ways. Bioavailability does increase when they're cooked, as I recall, but they're far from nutritionally worthless when raw. There is a risk of disease if you use low quality commercial battery eggs, but I generally buy mine direct from small local farms which reduces the risk considerably.

I'm not a raw egg fanatic; I just toss one into a protein shake now and then if eggs for breakfast fits into the nutrition plan. Vince Gironda was a raw egg fanatic.

Couple other suggestions for the OP. If you keep hardboiled eggs on hand, it's a quick fix. You can also do very fast baked eggs. Crumble a piece of whole grain bread in a small oven safe bowl. If you want, add some chopped or dried veggies, herbs, tomatoes, cheese, etc. Break an egg on top of that. Sprinkling more cheese on top is optional but tasty. Bake at 350 until the egg is set.

If you want to get ass-fancy, drop a slice of prosciutto ham (or fat free turkey breast) in a muffin cup, spray it lightly with cooking oil spray, and use that as your baked egg bowl. Looks impressive and tastes nice too.

Here's another good one. Bake a quiche or an egg strata once in the week, then just nuke squares as you need'em.

Basic easy egg strata recipe that even a total dork in the kitchen can make taste good in less than 10 minutes of prep time:

Crumble a layer of whole grain bread into a baking pan. The chunks should be small-ish, about crouton size. If you're using stale bread, toss it in the food processor for a few seconds to break it up.

Throw in some tasty shit. Meat, veggies, cheese, cottage cheese, whatever. Open the fridge and see what's in there. Anything savory will do. Add spices to taste. Make sure everything you throw in is in fairly small chunks, just like the bread. The food processor is your friend. Stuff from a can is fine. Spinach, tomatoes, garlic and cottage cheese works very well. So does broccoli and nonfat cheddar cheese.

You may need to add more liquid to make things moist but not soggy. You can use milk, broth, or whatever. Drizzle it in a little at a time and stir things around. If you've used moist ingredients, like cottage cheese and tomatoes, you won't need any additional liquid and you may even want to drain it at this stage. You want the bread slightly damp but not soaking in liquid.

Dump beaten eggs, egg whites or egg substitute over this mess. Keep pouring until the liquid egg level is up to the solid level. You want a whole lot of egg in here as it's what holds the whole thing together. This is basically a great big egg cake with yummy shit stuck in the middle.

Bake at 325 to 350 until a toothpick stuck in the middle comes out clean. Cut in squares, reheat and stick in your face in the morning when you don't have time to cook eggs.

It's basically a savory bread pudding, and the ones I make have never generated anything but good comments even when it's non-nutrition-conscious people doing the eating. Some fancy restaurants serve upscale versions of savory bread puddings (albeit with a lot more fat involved) and they get away with it even when they're charging stupid prices.

I eat boiled eggs. For some reason I can eat alot more at a time, plus there's the convenience of being able to cook 4 days worth at one time.
