Homemade Chicken Fried Rice.

Just cut up 1 onion and 1 bell pepper and cook with some olive oil in a pan.

Cut up a few pieces of chicken breast in a seperate pan and cook until done.

Once the onions and peppers are nice and brown add in 2 cups of brown rice and cook with the pepper and onion for about 5 minutes.

Dump your chicken into the rice, onion, pepper mixture and mix well.

Add in some light soy sauce at the end and mix well.

Thats it. High in protein and good carbs.

Im eating it right now as I type this and its pretty damn good!

I do something similar, I just use my already cooked chicken breasts and slice them up to add to the onions once they've browned to heat it up and then add the cooked rice.

Do you cut up the chicken into peices? My step mother make a 30 gallon pot of something similar to this. It is amazing.

A little hint here...chicken breasts and tenders cut easilly with a knife if they're still partially frozen. If they're fully defrosted or fresh, a good pair of chicken scissors work better than a knife. I got a pair of chicken scissors from Pampered Cheff a few yrs. ago and they have held up wonderfully.

Isnt fried rice not that good for you? I eat brown rice (boiled).

I would like to try this but im cutting.

Will i be ok?

The difference between fried rice and white steamed is that fried has about twice the amount of calories...For your cutting it might be better to replace with steamed rice.

But this recipe sounds excellent for bulking i think i am gonna try it out. Thnx

The white rice will not be more of a benefit if cutting since it's processed, and high GI. Even though Bouncers recipe says fried....it's not as bad as it sounds. Olive oil is rich in EFA's, and is the best cooking oil to use in recipes like this. A little to get the flavor and fried effect is not going to have an impact on your diet as much as the local "kitty kat" shops food would. They fry all their food in peanut oil usually, and they don't use brown rice. They use white rice, and then all the grease turns it brown. This recipe is using brown rice which gives you the complex carbs, the chicken is of course the protein source, and as mentioned above....the olive oil will supply the omega-3 and omega 6 you need in your diet. Overall a very balanced bulking or cutting meal. It will depend on your portion size whether it will be for cutting or bulking.


Good recipe Bouncer. I hate using regular rice due to the cooking time, but maybe I'll try this out when I make my weekly meals on Sunday.

I also like to scramble up some egg beaters to add into the mixture, cook it in the same pan, just move the other stuff to the side to make room for the egg till it's cooked. I use a big non-stick wok. If you let the rice sit on a high heat without turning it too often, it will brown up nicely.
