Homemade Chicken Fried Rice.
Just cut up 1 onion and 1 bell pepper and cook with some olive oil in a pan.
Cut up a few pieces of chicken breast in a seperate pan and cook until done. Once the onions and peppers are nice and brown add in 2 cups of brown rice and cook with the pepper and onion for about 5 minutes. Dump your chicken into the rice, onion, pepper mixture and mix well. Add in some light soy sauce at the end and mix well. Thats it. High in protein and good carbs. Im eating it right now as I type this and its pretty damn good! Give it a try. |

I do something similar, I just use my already cooked chicken breasts and slice them up to add to the onions once they've browned to heat it up and then add the cooked rice.

Do you cut up the chicken into peices? My step mother make a 30 gallon pot of something similar to this. It is amazing.

A little hint here...chicken breasts and tenders cut easilly with a knife if they're still partially frozen. If they're fully defrosted or fresh, a good pair of chicken scissors work better than a knife. I got a pair of chicken scissors from Pampered Cheff a few yrs. ago and they have held up wonderfully.

Isnt fried rice not that good for you? I eat brown rice (boiled).
I would like to try this but im cutting. Will i be ok? |

I also like to scramble up some egg beaters to add into the mixture, cook it in the same pan, just move the other stuff to the side to make room for the egg till it's cooked. I use a big non-stick wok. If you let the rice sit on a high heat without turning it too often, it will brown up nicely.
