Baked Potato: BuddyBoy Style!
Per Sweet Potato,you will need:
1 tbs corn meal 60 cal 1 tbs fat free milk 10 cal 4 cloves crushed and chopped garlic cloves 1 diced shitake musroom cap *OR* 2 chopped white button mushrooms 1 tbs soft tofu *OR* 1 tbs cottage cheese about 30-50 cal 1/2 tsp parmesan cheese 20 cal 1 slice cooked and chopped turkey bacon 40 cal, 2 g protein 1/2 tsp olive oil 20 cal salt pepper Stuffing for one Potato = about 200-300 calories. 1. Microwave your sweet potato(s) for 5 minutes in the microwave. 2. PreHeat oven to 375 degrees. 3. Mix all ingredients of stuffing into a bowl and mash with a spoon. 4. Cut a slit in the zapped potato, and pry open. 5. Stuff with stuffing. 6. Bake for about 8-10 minutes. As far as calories, weigh your Sweet Potato, and figuree out the total calories. Add that to the stuffing calories. This recipe is pretty loose. You can add or subtract whatever you wish. For example, I made these today with shredded chicken to increase the protein. I also added shredded fat free cheese. Use your favorite herbs and spices. Try sauteing chopped onions and garlic and choppped jalepeno peppers in a tbs of chicken broth, and then add the corn meal/tofu/cottage cheese/ and what not. ALso, try using sun dried tomatoes. You can also use eggs/egg whites as a binder for the stuffing. Do not be tied to sweet potatoes.. There are "Lower Carb" potatoes.. look for Yukon Gold, and "Blue" potatoes. Eat up, and ENJOY!!
