vegetable ideas?
I am having trouble getting enough vegetables...I can eat chicken and tuna with tabasco sauce and nothing else all day week in, week out...but I guess I just get bored with steamed broccoli and peas and stuff. Any one have any ideas to make it interesting?

My most recent enjoyment is to cut a lime in half and put it on the chicken (Stab the chicken all over with a fork) while I grill it. Grill a green bell pepper with it. Take of the limes and put the pepper on top of the chicken when you flip it.

if you like yams, mash them with a little olive oil, and a paste made from fresh ground cumin, garlic, salt and some chili flakes/powder. tastes great and you can make an ass load in the beginning and portion it out all week.

Try making some Indian-style vegetable curries. Sautee some onions - add some garlic if you like. Cut up a couple of tomatoes into really small pieces and add them to the skillet. Mash them with the back of the spoon until they turn into a puree. Add whatever vegetables you want - works well with lots of vegetables like cauliflower, turnips, potatoes, zucchini, etc. Add salt and curry powder or chili powder to flavor. Stir fry in the tomato puree for a while until soft. It goes well with rice.

Roasted or grilled veggies are good too. (zuchini, bell peppers, red peppers w/ some evoo drizzled lightly over it)
