Start by trimming your chicken breasts, remove the fat and connective tissue and rinse. Pat dy with a paper towel and put in a bowl. Add a couple tablespoons of extra virgin olive oil and rub it all over the breasts. Sprinkle with seasoning salt. Pre-heat your oven to 400 degrees and heat a well-seasoned cast-iron skillet on the stove-top. Once the skillet is good and hot, sear the chicken breasts for about a minute on each side. Then, stick the skillet in the oven for about 12 minutes or so. When you take it out, cut open the breasts and make sure they're done (if not stick them back in for a few minutes).
This is the best way I've found to cook chicken breasts and have them stay juicy for days.

ive been doing the same thing lately. When there done i shred them with a fork. I do four double breasts at one time. I go thro that in 2-3 days. Somtimes i just grab a bowl of shredded chicked and splash some soy sauce on there and im good to go.

I have made it like that before.. it does come out juicier, then I chop it up and throw it in a whole wheat wrap with some veggies YUM!

the olive oil should keep it juicy ... some of the pieces i use Adobo seasoning instead of just salt. |

never did it like that before, will have to give it a try. something else you can do is boil the chicken breast until they are cooked, then place them on the grill to give them that grill flavor. few minutes on each side with the BBQ sauce painted on them. good shit.

because many times the grill will cook the outside of the chicken much faster then the center. and you have a raw center and crispy out side.
