Red Pepper Soup
This shit is the bomb. Made it out of a P90X Nutrition Plan book. It tastes more like excellent marinara sauce to me. I could see adding 2 lbs. of lean hamburger to this and having a wonderful spaghetti sauce.
Ingredients: 2 cups white wine 1 onion, finely chopped 5 roasted red peppers 2 cups celery, chopped 1 tablespoon garlic, minced 2 plum tomatoes, chopped 1/4 cup tomato paste 2 cups fat-free chicken broth, low sodium 2 tablespoons dried thyme 1/4 teaspoon each ground white pepper and ground cumin dash of salt Heat wine in a large, heavy soup pot over medium heat. Add onion, red peppers, and celery. Cook and stir for 3 minutes. Stir in garlic. Cook for 2 minutes, adding more wine if necessary. Add tomatoes, tomato paste, and broth, cover and bring to a boil. Reduce heat and simmer for 25 minutes. Puree soup in a food processor or blender. Return to the pan, add seasonings, and heat through. serve serves 12 per serving: 57 calories trace fat 4 g protein 7 g carbs 145 mg Sodium |

I have the materials. We're following the diet, but not the excersice portion. I did the workouts last year for two months. The workouts are challenging and the exercises are great, but they're mainly high rep calorie expenditure type of workouts. You can increase resistance but it is through resistance bands or grabbing heavier dumbbells w/little to no rest. They did lean me out a bit late last spring.
I still use the yoga, stretching, cardio, plyo & kenpo videos a few times a month. I enjoy the diet portion because it introduces a bit of variety in healthy vegetables, dishes, soups, etc. Also, I enjoy the fact that recipes and meal plans are laid out for you while Solstice enjoys the fact that it has options for numbers of proteins, carbs, fats in a daily plan. We did a recipe plan this week, and while some of the soup recipes will last a few weeks, we still paid about 250 in groceries this week. We'll see how much it drops the next week as neither one of want to pay that much. |

I had heard the workouts were rather challenging, so I was curious about that portion of it. Sounds like a pretty neat program actually - MINUS the $250 a week grocery bill for 2 people!! Yuck!!
