Seafood Salad With Yogurt-Herb Dressing
One 6 1/2-oz. can white meat tuna, packed in water, drained One 4 oz. whitefish cooked and flaked or 5- or 6-oz. can flaked crabmeat, drained 1 ripe avocado, peeled, seeded, and chopped 1/2 cup Cucumber, thinly sliced 3 cups romaine leaves, torn 1 cup Fresh Watercress, torn 1 cup fresh basil, finely chopped, or 2 tsp. dried basil, crushed 1 cup croutons, made from toasted, unbuttered whole wheat bread 1 8-oz. container plain ff or light yogurt 1 tbsp. Dijon mustard 1 tbsp. fresh dill, chopped, or 1/4 tsp. dillweed Dash ground fresh pepper Alfalfa Sprouts or Radish Sprouts as garnish In a large bowl, toss together the tuna, crabmeat or whitefish, avocado chunks, cucumber, romaine leaves, watercress, and basil with croutons till well combined. In another bowl, stir together the yogurt, mustard, dill, and a dash ground fresh pepper. Drizzle over salad and toss well. Serve on individual plates, garnished with alfalfa sprouts or radish sprouts. Makes 3 or 4 servings; about 340 calories each for 3 servings or 255 calories each for 4 servings.
