hams, shoulders
I feel my hamstring and shoulder workouts are missing something, or that I'm not doing too much
HAMS: RDL, 3x12 lying ham curl, 3x15 glute-ham, 3x12 SHOULDERS: db or bb press, 3x12, 8, 6 db or cable lateral raise, 3x12 rear delt db: 3x10 does this look adequate?

Just stating the obvious, but make sure you mix it up a bunch. I like upright rows and I think they're called around the worlds or Arnold presses for shoulder. Obviously, deads are great for hams and even lunges hit the hams pretty well too. I love lunges on leg day.
