I marinade about 14-15lbs a week. I honestly just eye ball it. I'll dump the hot sauce and than mix it with the chicken real well. You'll see the chicken absorb the marination and give off a slight pink color. That's very light, and it won't taste like anything. I add a bit more until the color is slight red. That's perfect.
