Made this for dinner and it made a full crockpot. Nothing too exciting, but was good over rice - and easy!
INGREDIENTS:
fresh or frozen chicken breasts -- I used 3.5 pretty big ones and it made a lot
1 (20-ounce) can crushed pineapple, drained
2 (15-ounce) can black beans, rinsed and drained
2 cups mild or medium salsa
DIRECTIONS:
Place the chicken in the crock pot and add the rest of the ingredients. Cook on low for 6 to 8 hours. Remove the chicken and shred into bite-size pieces. Mix the chicken back in with the rest of the ingredients. The mixture will be a little soupy – you could drain off some of the excess liquid before serving
