Heres something I make a huge pot of and eat over a few days. All organic/natural ingredients and making it from scratch you can control the sodium. The rice is actually cauliflower chopped up in my food processor. Its great because its ready to go if I need a quick meal.

Garlic/onion/carrots/celery/cauliflower/shredded chicken

Looks good. I make something similar and use bone broth as the stock. You should try that, adds a bit more flavor and bone broth has other benefits as well. Has collegen protein and helps with inflammation.
