    I dont hunt but alot of my co workers do and I have been having them kill me a deer or two every year. I had processed by the omish. They made breakfast sausage and it was so lean I had to put water in the bottom of the skillet or it got a bit dry. I am not very good at cooking the stuff yet but getting better. Pipe in if ya got any tips for cooking the steaks. I can make them taste pretty good but I always get them to tough.

    I usually get it ground with a little beef fat, still very lean and use it like ground beef in tacos, chili, dearburgers ( may need to add an egg to help keep together). Use olive oil for sausage and steak or chops. Tasty!!!

        If by "steaks" you meand the backstrap / tenderloin, my fav. way to cook is to wrap the entire strap in thick cut bacon (held in place with toothpicks) and throw it on the grill.

          Step 1: Hot fire, preferably charcoal or mesquite.
          Step 2: Marinate meat with your choice of marinade or rub.
          Step 3: For steaks, brush lightly with olive oil just prior to grillin. Let them cook quickly, just a couple of minutes a side usually. Serve rare on a heated platter. Venison steaks dry out rapidly when they cool off. For backstrap, try this and thank me later. Cut strips, about 1/2" thick, the full width of the strap, and about 6-8" long. Season to taste, then take a fresh pineapple spear and 1/2 jalepeno pepper and lay them at one end of the meat and roll it up. Then "wrap" it with thick slice peppered bacon, toothpick it, and grill it. When the bacon is about done so is the meat. It doesn't get any better than that flavor wise, and if you don't eat the bacon, this is about the healthiest protein source on the planet.

              salt pepper flour and fry it aint too bad either.I eat a lot of deer.very lean and better for you than beef

                  i slow smoke the steaks wrapped in foil with onions and peppers then open it up after 4 hours and let it smoke for 1 more. the meat falls apart and tastes like a real lean brisket. also use meat tenderizer and pierce the meat with a fork the night before you cook it throw it back in the fridge, marinate with your fave the next mornin then sear it on both sides lower the fire and slow cook.

                      I don't hunt but my mother does!!! :eek:She is a member of a Hunt Club! I love it when she has the steaks cubed, then breaded and fried! Man...add some mashed potatos and gravy and yummy! Bad for ya but oh so good!!!

                          When cooking steaks, cook it at high heat and cook it fast. Remember that any marinade with sugar in it will dry your steaks, so put it on after yo ucook if it has sugar. Cook burger the same way too.

                          Someone mentioned wrapping it in bacon. That is an excellent idea and tastes great.

                          As for sausage, cook it on medium heat and DON"T add water. Use an oil instead. Water never seems to work, I dunno why. Make sure not to use too much oil, but sausage will make alot of its' own while cooking.

                            Back Straps... Slice thin and saute' in oil and make it into brown gravy. Serve with cubed potatoes baked in the oven. Salt will also dry out the meat, if you apply before cooking. Elk meat is the same only bigger portions.

                              Get you a big deer roast put it in the crock pot add some potatoes and baby carrots a can of cream of mushroom soup and a bunch of herbs and spices esp. black pepper let it cook on high for about 5 to 6 hours or untill falling a part.... and then BAM!!!!!
                              you got yourself a nice dinner:D
