                  No offence but I work with cattle every day and my family owns dairy as well as beef cows. The animal in your avatar is a bull. A male. Breed not withstanding he still has his testicles, if he didn't he would be a steer. If he had an udder he would be a she and therefore a cow. Steroids you may know, cattle you don't.

                            What are your thoughts on allowing a bulls to be raised until they are almost 1 1/2 years before having them cut. Then heavily feeding them corn/feed/grain and around 2-3 years having them processed for meat? My father was adamant about this being the best way to get the leanest meat from cattle... I suppose the bull / steer was more active and with the added test before being cut it made the meat much much much leaner and somewhat gamey.

                              Opinions vary, and it depends on what you're looking for. The taste and to an extent the tenderness comes from the fat content (marbling). Your Dad was right about it being more lean but it would depend on the cut and diet too. Veal is one of the best cuts of meat you can get, partly because of it's diet (milk fed) and partly because of it's age and it's inactivity. It all plays a part.
