as a book they say that most books win 5% of all bets for the day as a rule of thumb?anyone heard this or what % it is?

My "guy" here in Salt Lake takes about $10k in bets a night. If he is doing his job correctly and moves the lines appropriatly, he will have (in theory) 5k on one side of the bet and 5k on the other and just clear the juice. About $1000 per nite (10%). I would say that 5% would be a pretty good night for big bookies.
