As you may know, the gods were the owners of things like fire, sun, love, thunder... This was how they explained thing until science taught us more. I feel one of it's downfalls was there were to many to hold a cohesive system, so as science showed how the unexplained happened it was easy to chip away at the gods.

It's hard to really know why and when it really started dying out. All the religions you listed (Catholics are all Christians but all Christians are not Catholic) are all sects, like sub divisions, of the Abrahamic religion. Just as Christains have, babtist, methodist, catholics... Jews have Reform, Orthodox, and Conservative... and Islam has sunni, Shi'a... It's all a matter of taste. Richard Dawkins refers to faith as an emotional placebo. Some (more like majority) people can't cope with simply not knowing and waiting to find out.
