Is there a rule of thumb to go by for consuming egg yolks per day? I usually eat at least 6-8 eggs per day, only 2 whole. Just wanted to know how much is too much?

There are two types of cholesterol: dietary cholesterol found in food and serum cholesterol found in your blood. Rather than being converted by food cholesterol, serum cholesterol is predominantly manufactured by the body. This cholesterol type can be further divided into HDl and LDL. HDL is the good guy because it's easily transported to the liver for removal from the blodstream. LDL is the bad guy because it has the tendency to stick to artery walls. Prior wisdom used to be that egg yolks would increase the amounts of LDL in the blood. That was until recent studies such as the one conducted at the University of Arizona which analyzed 224 dietary studies conducted over the previous quarter century and investigated the relationship between diet and blood cholesterol levels. This study revealed that dietary cholesterol does not contribute to serum cholesterol levels. Saturated fat is the culprit. And each egg yolk contains only 1.6G of sat fat. Hope this helps.
