They are definitely good for you. They are a good source of lower GI complex carbs. There's nothing wrong with the right kind of carbs eaten in the right amounts at the right time. Brown rice and vegetables are two other good sources of carbs.
I peel 'em, chop 'em, boil them for about 30 minutes, mash them and then add a bit of cinnamon and cayenne pepper (then you don't need butter ;) ). Delicious! Usually I have quite a bit leftover so I'll throw it in Tupperware and freeze it for lunches - heats up fine and still tastes great!
