This is a recipe I thought Id share since Im bored. I may this quite oftenfor both taste and nutrition value. Its very inexpensive and is actually impressive ,especially if youre entertaining a friend....
You'll need:
1 pound scallops
2-3 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
1 tablespoon honey
1 tablespoon soy sauce
1/4 teaspoon ground ginger
1/4 cup toasted sesame seeds
1 bundle Portabella mushrooms
I use Bay Scallops, theyre fresh for around $10 a pound. In a large mixing bowl, take your scallops, mix in the honey, lime juice, ginger, oil and soy sauce. After it is mixed well, put it in the fridge for about 4-5 hours, but make sure you stop by and mix it around often.
After its marinated for 4-5 hours, heat your stove top on med-hi and dump in your mix. At this point I add some fresh garlic, but thats optional. After the scallops begin to brown, remove them from the pan and throw in your mushrooms. After they have browned, turn the stove top off and put the scallops back in with the mushrooms.
At this point, you can add your sauce (optional). Place on a plate and eat like its your job.
