  • Peanut Butter chicken in Cucumber dip

    For Peanut Butter Chicken:



    -4 boneless skinless chicken breasts

    -2 large (heaping) tablespoons of creamy peanut butter

    -1/3 cup teriyaki

    -2 tablespoons of peanut sauce (if you don't like spicy food, leave this ingredient out - I say MAN UP and use it because it's tasty)

    -1 tablespoon of minced garlic

    -Salt and pepper



    Take a large bowl and combine peanut butter, garlic, peanut sauce, teriyaki and some salt and pepper. Mix until it’s a thick and creamy basting sauce.



    Take chicken and poke holes in it so it absorbs flavor. Cover chicken with sauce and place in refrigerator to marinate.



    While grilling, baste chicken with leftover peanut sauce until there is none left.



    For the cucumber dip:

    In a small pot combine

    -¼ cup water

    -1/3 cup sugar

    -½ cup white wine vinegar

    - 3 or 4 cucumber slices


    Cook until sugar is melted and cucumber slices are fairly soft. You can use more or less of the sugar and vinegar depending on your desired taste. You can add some salt and pepper as well.



    BANGING! My girl makes this for me at least once a week. Never can get enough of it.

    I think I'll try this w/o the dip--that much sugar sounds like trouble!

      Try it with splenda or another sweetener. It's definitely worth it!

        DN - I have a similar recipe (love peanut butter!):

        1/3 cup peanut butter
        1/3 cup soya sauce
        2/3 cup hot BBQ sauce

        mix together and throw in your chopped up chicken breasts cut in slices. You can either put them on skewers for the BBQ or even just stir-fry.

              is there a typo there for peanut sauce? maybe chili sauce? I dont know of peanut sauce being spicy? or chili oil? peanut oil?
