Tryoplex bars will stay good and have plenty of protein. Also, you can stick a couple scoops of whey combined with some pb in the microwave (add oats for some texture) with a little bit of water nuke it for 20 seconds and you'll have a nice little protein biscuit. Yeah it will get dry, but hey - its edible. You can also buy canned chicken at the grocery store Doesn't taste bad at all, and it doesn't have to be refrigerated.
I forgot about the canned chicken-I've used it when I've traveled but forgot about it here. I just don't like to bring cans cause they don't pack well when you're backpacking. I'll have to try that "protein biscuit" idea-sounds interesting!
