    Of course beef will work as well. Unthaw meat partially. While it is still partially frozen it is very easy slice. Slice into 1/4 inch strips. Soak in cold water if it is venison for 10 minutes then drain. Mix teriyaki and crush :bbq: ed red pepper for 1 hour in fridge. Put on dehydrator trays and lightly salt. Dry for 10 hours. Very high in protein low cal and no fat. If you soak the venison it tastes just as good as beef

      So, you don't use any nitrates or salts for preserving the meat? I suppose you just keep it refrigerated then?

        Love some venison jerkey. Can't remember my recipe it's at home, but it's got liquid smoke, cumin, crushed red peppers, morton tender quick, cyan pepper, I think it's also got teraki. I'll see if I can find it.

          I bought some cajon seasoning from Cabela's. Turned out real good!!
