Sometimes, I'll add a bit of lime juice and cilantro.
For a Indian type take on it, I'll cook it with a bit of coconut oil or in some light coconut milk and water to give it a coconut taste. That's really good with curried chicken or even beef.

No, but years of cooking and trying to cook healthy foods on occasions when I have people over to my house that they will still enjoy has forced me to find ways of cooking that makes healthy food taste great for others. How much coconut milk/water do you use? This sounded really good, so I picked up a can of coconut milk today, but it has 10g of fat for just 2 oz., so I'm not sure how much I should water it down to make it healthy and still taste good. Spanish Brown Rice and Chicken
Ingredients:
1 boneless, skinless chicken breast
2 cups of brown rice
1 can of chicken broth
1/2 red pepper chopped
1/2 green pepper chopped
1 medium onion chopped
Salt to taste
Pepper to taste
1 teaspoon of Chili Powder
tobasco sauce to taste (I used about 20 drops)
Cook brown rice for about 45 minutes in chicken broth and water. Chop vegetables and saute them in olive oil until onions are translucent. When rice is complete, mix with rice and cooked vegetable in a mixing bowl. Add salt, pepper, tobasco sauce and chili powder.
Remove fat from chicken breast and cut it into narrow strips. Heat skillet with olive oil to medium high temperature. Place chicken strips in skillet and brown them on each side. Cook until done.
If vegetable rice dish needs to be heated, heat your serving in a microwave and put the hot chicken strips on top.

I actually usually use the lite coconut milk but I think it's just watered down coconut milk. I like using the coconut milk because coconut is a good source of MCTs, so it is an easy way to get some good fats into my diet. Obviously, if you want more coconut flavor, you can use all lite coconut milk or 2 cups water, 2 cups coconut milk. Another think I've liked is to just mix some coconut oil (NOW foods sells it really cheap) into the rice after it's done cooking.
