Its a diet tip, most empty calories are eaten on the run, i.e. grabbing snack food and eating without realising it.
The suggestion to sit down when eating, makes you more aware of what you are eating and how much of it per sitting.
Its easy to keep grabbing a handful of nuts or chips as you pass the bowl and not even realise how many you have eaten, hence the don't eat while standing up suggestion.
Eating when sitting down, helps you to see how much you are eating and hopefully helps you to eat less.
Its the same as the "don't eat while watching TV" suggestion, as you can eat a ton without even noticing it.
I can't think of any physiological reason for digestion being different when you stand or sit.

My friend always used to stand up after eating because his dad said it helped digestion. Gravity is on your side that way instead of laying down. Dont know if it actually makes a difference.
