  • Blackened Cajun Filets

    I just ran across this and figured that it needed its own thread ;)...

    Ingredients:

    2 tablespoons paprika
    1 tablespoon salt
    2 teaspoons cayenne pepper
    2 teaspoons onion powder
    2 teaspoons garlic powder
    1 1/2 teaspoons ground white pepper
    1 1/2 teaspoons ground black pepper
    1 teaspoon dried thyme
    1 teaspoon dried oregano
    Olive Oil

    4 six ounce filets

    Directions:

    In a small bowl, mix together the paprika, salt, cayenne pepper, onion powder, garlic powder, white pepper, black pepper, thyme and oregano.

    Heat a large cast iron skillet over high heat for 10 minutes or until extremely hot.

    Dip fish into the olive oil and sprinkle each fillet generously with the seasoning mixture. Place the fish fillets in the hot skillet. Cook until the coating on the underside of the fish starts to blacken (3-4 minutes). Turn the fish over. Pour a tablespoon (+/-) of olive oil over the fish and cook for another 1-2 minutes or until the fish flakes with a fork.

          I've made similar blackening spices for chicken, steak, burgers--add spice to anything.
