  • Shibby's Oatmeal cookies

So I was sitting at work yesterday trying to think of how I can make a healthy dough. Well here's what I experimented with and they came out damn good. You kind of have to plan ahead to make these. I havn't figured out the nutritional values though.

1 cup of brown rice (dry measurement)
Cook the rice to where it is really soft. Pretty much over cook it a little.

Put that in the fridge until the rice is cold

Put the rice and 3 eggs, and 1/4 cup of water in a blender or food processor. You may need to adjust the water. I just added a little a couple times. I blended it until it was a like a thickish cake mix. I then added 1 and 1/2 cups of oatmeal, 20 packets of splenda (1/8 cup) and 1 tbs of cinamon. Bake at 300 degrees for 20-30 minutes.

Rice and Oatmeal? Did you try it with just Oatmeal? Wondering if it would turn out the same? Looks good none the less.

I guess you could try blending up some cooked oats and then adding some dry ones afterwards. My thinking was that flour is made from a grain and so is brown rice. Maybe if I had something that could crush the dry rice into a powder, the consistancy would be more cookie like.
