    Barley Risotto

    2 quarts of water

    1 c. diced carrots
    1 c. diced onions
    1 c. diced celery
    2 bay leaves
    1 teaspoon of olive oil
    &
    1-1/2 c. pearl barley (rised)

    1. Bring the water, carrots,onions, celery, bay leaves, & olive oil to a boil.
    2. Once boiling add barley and cook for approx 20-30 mins., run it through a strainer. Eat.
    3. OPTIONAL - before you eat it, add smart balance or butter 2-3 tablespoons & mix it in.

        wow - I didn't realize barley was THAT low on the GI. I've never had it - I'll give it a go - thanks :)
