Sweet potato pancakes and french toast - all healthy versions...

Do a lot of different things with stir-fry with my chicken and rice....

Try to find something called "moppin sauce" - it's a bbq baste that works really well in a lot of things......

Been doing things with Matza bread that is pretty good too....

I'm with ya brother. Only 4 more days for me. Can't wait to eat again. That's why I'm waiting for fog (that SOB) to post up the recipe.

Also looking for others too. I love beef so I think I'm going to start making a oatmeal meatloaf (96% lean beef). I'll make a post for this.

my most recent one just to make chicken seem different was to just add hot sauce and then the secret ingredient....garlic pickles sliced up and mixed into it. It tastes just like a buffalo chicken sandwhich without the bread or frying. love it.

I love protein cheesecake with low fat or nonfat cream cheese, vanilla whey protein, Egg Beaters and assorted flavorings. I messed around with the recipe and added some soft goat cheese and some Japanese fragrant citrus, and it was awesome if a bit higher on the dairy fats.

OMG- Tried this Chicken Pesto recipe that was LETHAL.

I got the Pesto sauce from a Knorr sauce packet. (Low cal, and you only add 1/4 c olive oil & 3/4 c water). Cooked it using directions on packet. Then I threw in my own Italian twist: I toasted 1/4 c pine nuts, and added to sauce, along w/ 1/4 c parmesan cheese.

I had this w/ wheat linguini noodles

All I did was add my already cooked chicken tenderloin pieces to cooked pasta in the pot, and poured the sauce over the noodles & chicken and tossed.

It was OUT OF THIS WORLD. Obviously, high in carbs, so maybe better as a lunch meal.

heres a good one. Stuffed chicken breast
                              2 chicken breasts 8oz each
                              1 small bag frozen spinach
½ jar or roasted red peppers diced
                              1 garlic clove minced
                              ¼ red onion diced
                              2 oz feta cheese
                              1 tbsp + 2 tsp olive oil
                              1 tbsp brewers yeast

Add one tbsp oil to pan on medium heat sauté garlic and onion. Once cooked add spinach until just warm. Add feta and peppers and cook until cheese melts.
Butterfly chicken breasts and place on a cookie sheet lined with foil. Fill with spinach mixture and place cut side down on foil. Lightly coat with remaining oil and sprinkle with yeast. Place in oven at 375 for 20 min.

To reduce fat use less oil. This is 2 servings.
