So, when you are doing a competition diet, ANY variated form of a meal is always welcomed. I got this idea from a local restaurant the other day:
6oz chicken strips, thawed and cut into slices
1/2 red bell pepper cut into strips
1/2 green pepper cut into strips
1/2 small onion cut into strips
Fajita seasoning (available in the hispanic section of your local grocery)
2 cups lettuce
Balsamic Vinaigrette Salad spray
Spray large skillet w/ Pam, and cook seasoned chicken over med-high heat for about 5 minutes. Add veggies & a little more fajita seasoning. Cook another 5 minutes, turn heat to low and cook until veggies become soft. Spread chicken & veggies over lettuce. Spray with Salad Spray and eat!
