    Easy to make, pretty decently tasty to eat.

    Take a baking pan. Crumble up enough whole grain bread in it to make a layer on the bottom. Dump a couple cans of whatever veg you want on top of that, after draining all the liquid off first. I used diced tomato and butter beans tonight, plus a frozen pack of cauliflower and broccoli that I chopped up. If you use frozen veg, thaw them in the microwave first and drain them well so you don't have liquid in the mix. Toss in some seasonings (dried onions and garlic is good), a bunch of nonfat shredded cheese, some big cans of tuna (don't forget to drain these), and mix it all up. Pour in a carton of Egg Beaters or egg whites and mix it some more. Top with more cheese and bake at 350 until firm.

    Ohyeah, you can dump cottage cheese into it too. I didn't do that tonight since I'd already done a lowfat enchilada dish the night before involving ground organic beef mixed half and half with cottage cheese, plus roasted peppers, cilantro, garlic and nonfat cheese, wrapped in whole grain tortillas and cooked in a pan with a can of tomatoes and a can of pinto beans dumped in first.

    sounds like something i will have to try. you do have an odd cooking style. :P
