Was messin around with the wok and this is a good one here. For anyone that has ever tried the mexi-ranch sauce from applebees, you know its amazing. The sauce used in this recipe is very similar and I think it tastes even better.
I always make the sauce first. It is two steps. It is a mixture of either low fat or non fat ranch and your favorite mexican salsa. (I use chunky medium) The rule of thumb is 3 times as much ranch as salsa. I usually mix 1.5 cups of ranch with .5 cups of salsa. This usuallly lasts me a few days. I'll keep it in the fridge and put it on random meals, it is good on anything. After you make the sauce you may want to add more salsa, just depends on your taste. Now stick the sauce in the fridge until you are done cooking.
Start off buy chopping up a large chicken breast and throwing it in whatever you are using to stir fry with 1 tablespoon EVOO. I always use a wok for my cooking nowadays, but it will work just as well on the stove. When the chicken is almost done cooking, I will throw in some chopped red onion and small tomato pieces. I will keep on stir frying until the onions start to brown. Last thing I do is throw in some 2% cheddar cheese and let it melt a little. Thats the end of the cooking. Then I'll pour my stir fry over 1 cup cooked brown rice, and mix it all up. (I usually just use success rice brown rice so I can just stick it in the microwave while cooking.)
Pour the desired amount of sauce over your meal and enjoy!
