Here in a nutshell is the mechanism of carb cycling.
The trick of carb cycling is to trick your body to burn fat without burning muscle.
In the low carb phase, you are trying to deplete the muscles and the liver of glycogen to force your body to burn fats. This takes a few days to happen. During this period, I also do increased reps with lower weight to really burn the glycogen in the muscles. During the low carb phase, you need to keep your proteins high to spare muscle loss.
Then, you go into the carb load phase, typically for maybe 24-30 hours, where you dramatically increase your carb intake. This is when a funny thing happens. Your body is still in the mode of consuming fat for fuel and there is a time lag when all the carbs you eat go to replenish the glycogen in your liver and muscles and NOT to replenishing your fat stores. You are trying to take advantage of this window when your body is not paying attention, so to speak. In about 24-36 hours, by the time your body realizes what's going on, you have lowered your carb intake again. If you didn't, you'll get fat again.
During the carb load, you can pretty much eat lots of carbs. Milk, pasta, bagels, etc. I would be careful not to overdo the ice cream because it has a lot of sugar and sugar is not the best source of carbs. But in moderation, it should be fine. Keep it the lowfat/nonfat kind though - you don't want to cram too much fat during your carb load either. So pizza is good but don't eat a couple of pies :)
