  • Tarragon Chicken

    4 chicken breasts
    1 1/4c white wine
    2 heaping TBSP dijon mustard
    1 1/2 tsp Tarragon
    1 TBSP butter
    1 TBSP olive oil

Melt butter & add oil in skillet over medium heat. Add chicken. Brown for about 5 min each side. Meanwhile mix wine, mustard & tarragon & stir. Once chicken is browned, add liquid to skillet. Reduce heat to medium low so chicken does not dry out. Cook for about 20 min. Serve w/ skillet gravy if desired. :agreed:

Sounds great. I love tarragon chicken salad (which isn't that good for you). I'll have to try this.

Tarragon tastes a little like licorice or Anise.

This creamy sauce is a classic with chicken - and while tarragon is the traditional herb, thyme or rosemary would also work beautifully. Serve with sauteed string beans and wild rice.
