  • Slow-Cooked Salsa Chicken Tacos

    We had this the other night and it was really good. The chicken comes out very tender. You could eat it any way, obviously - not just on tacos.

    1.5 cups chicken stock or broth
    1.5 cups of mild salsa
    2 (8 oz) b/s chicken breasts

    In a large saucepan, bring salsa and broth to a simmer over medium heat. Add the chicken and cover. Simmer for about 1.5 hours. Remove from pan, shred the chicken, and then add a little of the leftover sauce to keep the chicken moist.

    We put them on tortillas with black beans, lettuce, tomato, onion, and sour cream.

                        Can I use hot salsa--that pansy mild stuff tastes like ketchup to my burnt taste buds...and salsa doesn't have to be high sodium. Make your own. Same with black beans--I'm cheap and just buy them by the bag and cook them up.
