storing sauces question.

Gunna start making my on healthy pasta sauces so me and my wife can eat a similar dinner together. Does anyone know how much sodium is needed to act as a preservative if I plan on jarring it? Or an alternative preservative so it do.t go bad?

Couldn't just freeze individual containers of it until you need it?
