i wouldnt eat just an apple, throw together a protein shake with casein protein before bed...that way your body will have plenty of protein throughout the night.

Studies have also shown that when you're tired, your brain releases a chemical that is similar to that hungry feeling. People often confuse sleepiness with hunger and chow down.
