Shoulder presses (Arnold presses) for all around
Upright rows for lateral deltoids
Seated rear lateral raise with cables for posterior heads
Those are my favorites to do but, I also think that front, lateral and rear raises can't be ignored for their isolation and focus on each of the heads of the deltoid to get that well rounded look.
-Dumbell military press :lower the bar to your ears, no lower and don't lock-out at the top.
-One-arm raise to the front :brace yourself against a preacher bench with the opposite hand. Hold the dumnell with a hammer grip and raise it to shoulder hieght while controlling the weight. Pause at the top. Control the weight on the way dow. Do NOT swing the weight till the end of your last set, then you can cheat a little to get a few more reps. Repeat on opposite side.
-One-arm lateral raise :done the same as one-arm raise to the front.
-Rear-delt raise on an incline bench: Lean forward on an incline bench so your chest is on the bench (you can also do these on the chest-supported t-bar row if your gym has one) and raise the dumbells with your pinkys up.
