i like to marinade the fish in soy sauce, garlic, and pepper. once on the foil i only squeeze lemon and a few dashes of pepper. im sure you can put any type of season on it. the key on the grill is to wrap up the fish in the foil first. let it cook all the way threw. then open up the foil and let the grill flavor get in. let it get a little brown. i like it nice and dry on the outside and moist on the inside. i dont know about you but i hate eating soggy fish. give it a try.
Thanks, I'll get it marinading now. I figure an hour is pleanty of time since flounder is so thin.
I don't like fish all sloppy either. It cooks quickly though so it took me a while to learn how not to overcook it. Tuna is tough if over done, salmon on the otherhand, I like it right on the grill, high flame, skin side down, burnt to a crisp on the bottom and that flavors it all the way through.
