The tamale place by my house makes a killing, its just a little tamale truck and people flock to that thing when it is open.

i think that it is a good idea. remember what they teach in the business cources? location location location. There is a little taco shack here in town that just has a drive through, they are open 24/7 and you can go by at 5 am and there are people buying tacos, so one would think that once you get established and get a good location you should be a winner.

My dad took over his father's Irish Pub and it had many years of success because the staff was competent and friendly and the food was really good and reasonably priced.
Their lunch crowd was primarilly construction workers. Dad served huge portions priced fairly. The guys would often come in after work as well.
The hardest part about the industry was always having to be there and finding employees who wouldn't steal.
For the name...I like "Bouncer's Burgers." Simple and easy for people to remember.
You could offer traditional beef burgers as well as your weirdass concoctions as specials of the week.

Been in the restaurant business for 15+ years as a manager, multi-unit operator and a partner of 7 franchise stores. (Been with Fuddduckers 13 years - so I know the business you are interested in).
