    Fish & tomato stew

    4 tablespoons of olive oil
    4 garlic cloves sliced
    1 onion chopped
    1 carrot chopped (optional)
    1 celery chopped (optional)
    1 small jar of olives (optional)
    2 (28oz) can's of tomatoes diced or puree
    2 splashes of hot sauce
    2 lb's of fish cut into 2 inch pieces (haddock, cod, tilapia, or sole)

    seasonings optional
    1 teaspoon basil
    1 teaspoon oregano
    1 teaspoon parsley
    1-2 bay leaves

    1. put olive oil in medium sized pot on heat high
    add garlic, onions, carrots, celery until soft

    2. add the rest of the ingredients/seasoning except for the fish.

    3. bring to a boil then add fish.

    4. reduce to simmer for 30 mins. done.
