I did this experiment this morning and by doing them under the broiler, I pulled .015lbs of fat. Theoretically, the meat should have 0.07lbs of fat to begin with, which would mean there is only 0.055lbs of fat left in it. So, I guess it lost about 20% of the fat. I'd still prefer to find 99% lean--so I might buy turkey tenderloins and grind them up for ground meat.

The turkey tenderloins are really good....especially smoked on the grill. In fact, that is ALL I ate the entire time I dieted for my show.

How long does it take to smoke them--gas grill or charcoal? One of my grocery stores just started selling 99% fat free turkey tenderloins, I think from Perdue (but not frozen) for about $3/lb! I've found my new favorite meat.

Those are the ones! The texture, IMO, is just better than chicken. And, actually, each tenderloin is about 12-14 oz, so I split lengthwise and cook.

I guess it takes about 30 min to smoke them on a charcoal grill. Buy those smoke chips, dampen, and move to one side. Cook at medium low heat for I guess about 30-35 min. You can get a meat thermometer...and cook to about 145 degrees. Don't worry about the other 5 degrees if you are cooking for the week because it will get to the 150+ when you reheat.
